In our region a good first course means vincisgrassi or pappardelle. Vincisgrassi are our local variety of lasagna whereas pappardelle are a broader form of tagliatelle served with a delicious hare or boar sauce.
Another traditional first course is “lo riso corgo” also called in dialect “i frascarelli”, a poor yet delicious dish rather like polenta
made from rice, water and tender grain served with lots of sauce.
Second courses?
We can recommend ciauscolo (a soft salame), ham, lonza and a selection of cheeses from our mountains. You don’t like meat? Try the “blue” fish from the Adriatic – fantastic when fried or in a fish soup called “brodetto”. The one made in Porto Recanati is famous all lover the world. And what about vegetables or side dishes? Ascoli’s fried olives, fried custard or fried marrow flowers are really special.
Are you thirsty now?
Our region has many quality white and red wines. You prefer white? They even drink our Verdicchio in Australia! You prefer
red? Taste our Rosso Piceno or Rosso Conero. Still got some room left? Then try some of our cakes with “boiled” wine: frustingo, for example, made of figs, nuts and chocolate or our famous “sughitti” made of must and walnuts. It’s now time for a coffee and an “ammazzacaffe” (digestive liquer), for the former Romcaffé is Macerata’s own often “corrected” (diluted) with a few drops of Ascoli’s Anisetta Meletti or Mistrà Varnelli.
As for the latter which will enable you to digest nails, we recommend Amaro Sibilla 38° of pure dynamite!
